- 2lb (1 kilo) Ground Lamb Shoulder (60% meat, 40% fat)
- 1 onion, shredded
- 1 bunch Parsley, finely chopped
- 1 tablespoon Cinnamon
- 2 tablespoon finely chopped Mint
- 1/2 tablespoon Allspice
- Salt and pepper
- 16 Wooden Skewers
- 1 cup (250ml) Yogurt
- 1/2 small red onion, finely chopped
- 1 cucumber, seeded, diced
- 2 tablespoons fresh mint leaves, chopped
- 2 tablespoons fresh parsley, choose
- 1/2 Lemon, juiced
